- 2 cups rolled oats
- 2 cups milk (whole, almond, or oat milk)
- 2 eggs
- 8 oz cream cheese, softened
- 1 cup fresh strawberries, chopped
- 1/4 cup maple syrup or honey
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1 tsp cinnamon
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8 or 9×9 baking dish.
- In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt.
- In another bowl, beat together the eggs, milk, maple syrup, and vanilla extract until well combined.
- Pour the wet mixture over the dry ingredients and stir until everything is coated.
- Fold in the chopped strawberries.
- In a separate bowl, mix the softened cream cheese until creamy and smooth.
- Spread half of the oat mixture into the prepared dish, dollop the cream cheese mixture on top, followed by the remaining oat mixture.
- Press down gently to combine without losing the swirled look.
- Bake for 30–35 minutes or until golden and set.
- Let it cool slightly before serving warm with a drizzle of maple syrup or yogurt.
Notes
Feel free to swap in other fruits like blueberries or peaches. Use coconut milk for a dairy-free option.
