Ingredients

- 1 lb ground chicken
- 2 tablespoons sesame oil
- 3 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 cup panko breadcrumbs
- 2 green onions, sliced
- 1 tablespoon sesame seeds
- 1 cup jasmine rice (or preferred rice)
- 1/2 teaspoon sugar
- Salt and pepper to taste
Instructions
- In a bowl, combine ground chicken, minced garlic, grated ginger, soy sauce, sesame oil, and panko. Mix until just combined and form into meatballs.
- Heat a skillet over medium heat, add a splash of sesame oil, and sear the meatballs until golden brown for 8-10 minutes.
- Boil rice according to package instructions, using chicken broth if desired for more flavor.
- In the same skillet, add garlic and ginger, sauté for 30 seconds, then add soy sauce and sugar to create a glaze.
- Place cooked meatballs on a bowl of rice and drizzle with glaze.
- Garnish with sesame seeds and sliced green onions, serve warm.
Notes
Serve with a side of stir-fried greens or pickled veggies for added crunch and flavor.
