- 1 (4-5 lb) Lamb Shoulder
- 4 sprigs Fresh Rosemary, chopped
- 6 cloves Garlic, minced
- 2 tbsp Olive Oil
- Salt and Pepper to taste
- 2 tbsp Honey or Maple Syrup (optional)
Instructions
- Preheat your oven to 325°F (160°C).
- In a small bowl, mix olive oil, minced garlic, chopped rosemary, salt, and pepper.
- Rub the garlic and rosemary mixture generously all over the lamb shoulder.
- In a large skillet, heat a splash of olive oil over medium-high heat and sear the lamb on all sides until golden brown.
- Transfer the lamb to a roasting pan and pour any remaining marinade over the top.
- Bake covered for 3 to 4 hours, basting every hour. Remove the foil during the last 30 minutes.
- Once the lamb reaches an internal temperature of 145°F (63°C), let it rest for about 15 minutes before slicing.
- Serve with your favorite gravy and side dishes.
Notes
For best flavor, marinate the lamb the night before. Pair with garlic mashed potatoes or a salad.
