- 2 cups boneless chicken breasts or thighs, cubed
- 2 cups roasted broccoli
- 1 cup sharp cheddar cheese, shredded
- 2 cups chicken broth
- 1/3 cup all-purpose flour (or cornstarch for gluten-free)
- 1 cup carrots, chopped
- 1 cup onion, chopped
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon fresh thyme
- 2 pie crusts
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet over medium heat, sauté chopped onion and carrots in olive oil until soft.
- Stir in the roasted broccoli and cubed chicken, mixing well.
- Sprinkle flour over the mixture and stir to combine, gradually adding chicken broth, stirring continuously until the sauce thickens (about 4-5 minutes).
- Remove from heat, add cheese, and season with salt, pepper, and herbs.
- Roll out the first pie crust into an oven-safe dish and pour in the filling.
- Cover with the second pie crust, sealing the edges, and cut slits in the top for steam to escape.
- Brush the top crust with melted butter and bake for 25-30 minutes or until golden-brown.
- Allow to cool for about 10 minutes before serving.
