  • 1 cup sharp cheddar cheese, shredded
  • 2 cups chicken broth
  • 1/3 cup all-purpose flour (or cornstarch for gluten-free)
  • 1 cup carrots, chopped
  • 1 cup onion, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon fresh thyme
  • 2 pie crusts
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, sauté chopped onion and carrots in olive oil until soft.
  3. Stir in the roasted broccoli and cubed chicken, mixing well.
  4. Sprinkle flour over the mixture and stir to combine, gradually adding chicken broth, stirring continuously until the sauce thickens (about 4-5 minutes).
  5. Remove from heat, add cheese, and season with salt, pepper, and herbs.
  6. Roll out the first pie crust into an oven-safe dish and pour in the filling.
  7. Cover with the second pie crust, sealing the edges, and cut slits in the top for steam to escape.
  8. Brush the top crust with melted butter and bake for 25-30 minutes or until golden-brown.
  9. Allow to cool for about 10 minutes before serving.
