A delightful twist on the classic Reuben sandwich, these crispy balls are packed with corned beef, sauerkraut, Swiss cheese, and served with a spicy Thousand Island dressing.

- 1 cup corned beef, finely chopped
- 1 cup sauerkraut, drained
- 1/2 cup Swiss cheese, shredded
- 1/4 cup cream cheese, softened
- 2 tablespoons Dijon mustard
- 1 cup bread crumbs
- 2 eggs, beaten
- Oil for frying
Instructions
- Prep the ingredients by finely chopping the corned beef and draining the sauerkraut.
- In a mixing bowl, combine the chopped corned beef, sauerkraut, cream cheese, Swiss cheese, and Dijon mustard; mix until well incorporated.
- Scoop out a tablespoon of the mixture and roll it into a ball. Place them on a baking sheet lined with parchment paper.
- Chill the formed balls in the refrigerator for about 30 minutes.
- Heat oil in a deep skillet to 350°F.
- Prepare a breading station with beaten eggs and breadcrumbs.
- Dip each ball in egg, then roll in breadcrumbs until fully coated.
- Fry in batches until golden brown, approximately 3-4 minutes each.
- For the spicy Thousand Island dressing, combine mayonnaise, ketchup, sweet pickle relish, hot sauce, and garlic powder. Adjust to taste.
- Serve the fried Reuben Balls hot with the spicy dressing.
Notes
Ensure oil temperature is correct for frying to avoid greasy balls. Chill before frying to help them maintain their shape.
