Ingredients

  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1/2 cup milk (or almond milk)
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • Vegetable or canola oil for frying
  • Cinnamon-sugar for coating

Instructions

  1. In a medium saucepan, combine water, milk, sugar, butter, cocoa powder, and spices. Heat over medium until it starts to boil.
  2. Add flour and baking powder, stirring until it pulls away from the pan and forms a ball.
  3. Remove from heat and let cool slightly, then incorporate the eggs one at a time until smooth.
  4. Transfer dough to a piping bag fitted with a star tip.
  5. Heat oil in a deep pot to 375°F (190°C). Test with a small piece of dough.
  6. Pipe strips of dough into hot oil, frying until golden brown, around 2-3 minutes per side.
  7. Drain on paper towels and roll in cinnamon-sugar while warm.
  8. Serve with cream cheese icing or chocolate dipping sauce.

Ensure oil temperature is consistent to avoid greasy churros. Fry in batches for best results.
