Ingredients

- 1 cup all-purpose flour (or almond flour for gluten-free)
- 1/4 cup cocoa powder
- 1 tsp baking powder
- 1/2 cup granulated sugar
- 2 eggs
- 1/2 cup milk (or almond milk)
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- Vegetable or canola oil for frying
- Cinnamon-sugar for coating
Instructions
- In a medium saucepan, combine water, milk, sugar, butter, cocoa powder, and spices. Heat over medium until it starts to boil.
- Add flour and baking powder, stirring until it pulls away from the pan and forms a ball.
- Remove from heat and let cool slightly, then incorporate the eggs one at a time until smooth.
- Transfer dough to a piping bag fitted with a star tip.
- Heat oil in a deep pot to 375°F (190°C). Test with a small piece of dough.
- Pipe strips of dough into hot oil, frying until golden brown, around 2-3 minutes per side.
- Drain on paper towels and roll in cinnamon-sugar while warm.
- Serve with cream cheese icing or chocolate dipping sauce.
Notes
Ensure oil temperature is consistent to avoid greasy churros. Fry in batches for best results.
