A decadent layer cake with finely ground pistachios and creamy mascarpone frosting, perfect for celebrations and gatherings.

- 2 cups cake flour (or all-purpose flour)
- 1 cup finely ground pistachios
- 1 tablespoon baking powder
- 1 cup unsalted butter, softened
- 1 ½ cups granulated sugar
- 4 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1 cup milk or buttermilk
- 1 ½ cups mascarpone cheese
- 1 cup powdered sugar
- Pinch of salt
- Chopped pistachios for garnish
- Honey or edible flowers for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a bowl, whisk together the cake flour, ground pistachios, and baking powder.
- In a large bowl, beat the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well between each addition, then add the vanilla extract.
- Gradually add the flour mixture, alternating with the milk, starting and ending with the dry ingredients.
- Divide the batter evenly between the prepared pans and smooth the tops.
- Bake for 25–30 minutes until a toothpick inserted comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
- Whip the mascarpone cheese, powdered sugar, and salt until smooth and fluffy.
- Once cooled, layer the cakes with mascarpone frosting in between and on the top and sides. Garnish with chopped pistachios and optional honey or flowers.
- Slice and enjoy!
Notes
Ensure all ingredients are at room temperature for best results. Allow cakes to cool completely before frosting to avoid melting.
