Description

A decadent layer cake with finely ground pistachios and creamy mascarpone frosting, perfect for celebrations and gatherings.


Ingredients

  • 2 cups cake flour (or all-purpose flour)
  • 1 cup finely ground pistachios
  • 1 tablespoon baking powder
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 4 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup milk or buttermilk
  • 1 ½ cups mascarpone cheese
  • 1 cup powdered sugar
  • Pinch of salt
  • Chopped pistachios for garnish
  • Honey or edible flowers for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together the cake flour, ground pistachios, and baking powder.
  3. In a large bowl, beat the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well between each addition, then add the vanilla extract.
  5. Gradually add the flour mixture, alternating with the milk, starting and ending with the dry ingredients.
  6. Divide the batter evenly between the prepared pans and smooth the tops.
  7. Bake for 25–30 minutes until a toothpick inserted comes out clean.
  8. Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  9. Whip the mascarpone cheese, powdered sugar, and salt until smooth and fluffy.
  10. Once cooled, layer the cakes with mascarpone frosting in between and on the top and sides. Garnish with chopped pistachios and optional honey or flowers.
  11. Slice and enjoy!

Notes

Ensure all ingredients are at room temperature for best results. Allow cakes to cool completely before frosting to avoid melting.
