- 1 cup granulated sugar
- 4 oz white chocolate, melted
- 1 cup unsalted shelled pistachios, finely chopped
- 1/2 cup sour cream
- 3 large eggs
- 1 1/2 cups graham cracker crumbs
- 1/2 cup butter, melted
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix crushed graham crackers with melted butter and a tablespoon of sugar until it resembles wet sand. Press the mixture firmly into the bottom of a springform pan. Bake for about 10 minutes, then let it cool.
- In a mixing bowl, beat the cream cheese until smooth. Gradually add sugar, beating until fluffy. Blend in the melted white chocolate until fully incorporated, followed by the sour cream and vanilla extract.
- Mix in the eggs, one at a time, just until combined. Fold in the finely chopped pistachios, reserving a few for garnish.
- Pour the mixture over the cooled crust and spread evenly. Bake for approximately 55 to 60 minutes or until the center is set but still slightly jiggly. Turn off the oven, crack the door open, and let the cheesecake cool completely inside.
- Once cool, refrigerate for at least 4 hours, preferably overnight, to let the flavors meld and the texture set perfectly.
- Before serving, garnish with whipped cream, chopped pistachios, or a drizzle of white chocolate ganache.
