- 1 cup brown sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground ginger

- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- Granulated sugar for rolling
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, beat the softened butter and brown sugar together until light and fluffy.
- Mix in the molasses and egg until fully combined.
- In a separate bowl, whisk together the flour, baking soda, spices, and salt. Gradually add this mixture to the wet ingredients, blending until just combined.
- Cover the dough with plastic wrap and chill it in the refrigerator for about 30 minutes.
- Scoop tablespoon-sized portions of dough, roll into balls, and roll in granulated sugar.
- Place sugar-coated balls on the baking sheets, spacing them apart, and bake for 10-12 minutes.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
Notes
Chill the dough for a chewier texture and avoid overmixing for soft cookies.
