Ingredients

Scale
  • 1 cup unsulfured molasses
  • 1 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • Granulated sugar for rolling

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter and brown sugar together until light and fluffy.
  3. Mix in the molasses and egg until fully combined.
  4. In a separate bowl, whisk together the flour, baking soda, spices, and salt. Gradually add this mixture to the wet ingredients, blending until just combined.
  5. Cover the dough with plastic wrap and chill it in the refrigerator for about 30 minutes.
  6. Scoop tablespoon-sized portions of dough, roll into balls, and roll in granulated sugar.
  7. Place sugar-coated balls on the baking sheets, spacing them apart, and bake for 10-12 minutes.
  8. Let the cookies cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

Notes

Chill the dough for a chewier texture and avoid overmixing for soft cookies.
