- 1 cup powdered sugar
- 1 tablespoon fresh lemon zest

- 2 cups all-purpose flour
- 1/4 cup cornstarch
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter and powdered sugar until light and fluffy.
- Mix in lemon zest, lemon juice, and vanilla extract.
- In a separate bowl, whisk together flour, cornstarch, and salt. Gradually add to the wet mixture, stirring to form a soft dough.
- Cover and chill the dough for at least 30 minutes.
- Scoop tablespoon-sized portions of dough, roll into balls, place on the baking sheet, and flatten gently.
- Bake for 10-12 minutes until edges are set but centers are soft.
- Let cookies cool for about 5 minutes, then roll in powdered sugar.
- Allow to cool completely on a wire rack.
- Serve and enjoy!
Notes
Experiment with plant-based butter for a dairy-free version. Increase lemon zest for a more intense flavor.
