Ingredients

  • 1 cup powdered sugar
  • 1 tablespoon fresh lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter and powdered sugar until light and fluffy.
  3. Mix in lemon zest, lemon juice, and vanilla extract.
  4. In a separate bowl, whisk together flour, cornstarch, and salt. Gradually add to the wet mixture, stirring to form a soft dough.
  5. Cover and chill the dough for at least 30 minutes.
  6. Scoop tablespoon-sized portions of dough, roll into balls, place on the baking sheet, and flatten gently.
  7. Bake for 10-12 minutes until edges are set but centers are soft.
  8. Let cookies cool for about 5 minutes, then roll in powdered sugar.
  9. Allow to cool completely on a wire rack.
  10. Serve and enjoy!

Notes

Experiment with plant-based butter for a dairy-free version. Increase lemon zest for a more intense flavor.
