Ingredients

- Bone-in lamb chops or rack of lamb
- 2 tablespoons Dijon mustard

Instructions
- Let lamb chops come to room temperature for about 20 minutes.
- Season both sides generously with salt and pepper.
- Heat a skillet over medium-high heat and drizzle in olive oil.
- Add lamb chops and sear for 3-4 minutes on each side for medium-rare.
- Reduce heat to medium, add minced garlic and fresh thyme, and sauté for an additional minute.
- Remove lamb chops and cover with foil to rest.
- In the same skillet, add Dijon mustard and stir to incorporate drippings, creating a rich sauce.
- Plate lamb chops and drizzle mustard thyme sauce over them. Garnish with additional thyme if desired.
