Ingredients

  • Bone-in lamb chops or rack of lamb
  • 2 tablespoons Dijon mustard

Instructions

  1. Let lamb chops come to room temperature for about 20 minutes.
  2. Season both sides generously with salt and pepper.
  3. Heat a skillet over medium-high heat and drizzle in olive oil.
  4. Add lamb chops and sear for 3-4 minutes on each side for medium-rare.
  5. Reduce heat to medium, add minced garlic and fresh thyme, and sauté for an additional minute.
  6. Remove lamb chops and cover with foil to rest.
  7. In the same skillet, add Dijon mustard and stir to incorporate drippings, creating a rich sauce.
  8. Plate lamb chops and drizzle mustard thyme sauce over them. Garnish with additional thyme if desired.
