- 1 lb boneless chicken (breast or thighs)
- 3 tbsp gochujang (Korean chili paste)
- 3 tbsp low-sodium soy sauce
- 3 cloves garlic, minced
- 1 inch ginger, minced
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 tbsp sesame oil (plus more for serving)
- Green onions for garnish
- Sesame seeds for garnish
Instructions
- Cut chicken into bite-sized pieces. In a bowl, combine gochujang, soy sauce, minced garlic, and ginger. Toss in chicken until well coated and let marinate for at least 30 minutes.
- Heat sesame oil in a skillet over medium heat. Add sliced onions and bell peppers, sauté until tender.
- Push veggies to the side, add marinated chicken, and cook until browned and cooked through, about 5-7 minutes. Stir to combine.
- Drizzle with more sesame oil, sprinkle with green onions and sesame seeds, and simmer for another minute.
- Serve with steamed rice or noodles.
Notes
For extra sweetness, feel free to add honey. Adapt vegetables based on what’s fresh.
