- 4 bone-in, skin-on chicken thighs (or boneless breasts)
- 1 cup Greek yogurt
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 2 teaspoons garam masala
- 1 teaspoon smoked paprika
- 1 teaspoon turmeric
- 1/2 teaspoon cayenne pepper
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 tablespoons lemon juice
- 2 tablespoons vegetable or olive oil
- Salt, to taste
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- In a large bowl, combine Greek yogurt, minced garlic, ginger, lemon juice, and spices. Add a pinch of salt and mix well.
- Add the chicken, ensuring each piece is coated. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight.
- Preheat your grill to medium-high heat or preheat oven to 425°F (220°C).
- For easy cleanup, line a baking sheet with aluminum foil.
- If baking, place marinated chicken on the baking sheet and roast for 35-40 minutes, flipping halfway through, until internal temperature reaches 165°F (73.9°C). For grilling, cook each side for about 5-7 minutes until charred and juices run clear.
- Let the chicken rest for 5 minutes before serving.
- Garnish with fresh cilantro, a squeeze of lime, and serve with cooling raita if desired.
