Description

A flavorful and aromatic dish featuring marinated chicken infused with a blend of spices, yogurt, and lemon juice, grilled or baked to perfection.


Ingredients

  • 4 bone-in, skin-on chicken thighs (or boneless breasts)
  • 1 cup Greek yogurt
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 2 teaspoons garam masala
  • 1 teaspoon smoked paprika
  • 1 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons lemon juice
  • 2 tablespoons vegetable or olive oil
  • Salt, to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a large bowl, combine Greek yogurt, minced garlic, ginger, lemon juice, and spices. Add a pinch of salt and mix well.
  2. Add the chicken, ensuring each piece is coated. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight.
  3. Preheat your grill to medium-high heat or preheat oven to 425°F (220°C).
  4. For easy cleanup, line a baking sheet with aluminum foil.
  5. If baking, place marinated chicken on the baking sheet and roast for 35-40 minutes, flipping halfway through, until internal temperature reaches 165°F (73.9°C). For grilling, cook each side for about 5-7 minutes until charred and juices run clear.
  6. Let the chicken rest for 5 minutes before serving.
  7. Garnish with fresh cilantro, a squeeze of lime, and serve with cooling raita if desired.

Notes

Marinate the chicken overnight for the best flavor. Adjust spices according to your heat preference.
