- 1 cup graham crackers (crumbled)

Instructions
- Preheat the oven to 325°F (160°C) and prepare a mini muffin tin with cupcake liners or grease it.
- In a bowl, mix crushed graham crackers with melted butter and sugar, then press a tablespoon into each muffin liner to form a crust.
- Beat cream cheese until smooth, then add sugar and sour cream, mixing until fluffy. Incorporate eggs one at a time, then stir in the mint or lime extract and green food coloring.
- Spoon the cheesecake mixture into the crusts, filling each about ¾ full.
- Bake for 15-20 minutes, until the centers are set but slightly jiggly; they’ll firm while cooling.
- Let cool in the pan for 10 minutes, then refrigerate for at least 2 hours until completely chilled.
- Serve topped with whipped cream, berries, or chocolate drizzle.
