Description

A tender and flavorful chicken dish marinated in creamy Greek yogurt with herbs and spices, perfect for grilling or baking.


Ingredients

  • 1 cup Greek yogurt (preferably full-fat)
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 3 cloves garlic, minced
  • 12 tablespoons dried herbs (oregano, thyme, rosemary)
  • Salt and black pepper to taste
  • 4 boneless chicken thighs (or breasts)

Instructions

  1. In a large bowl, mix Greek yogurt, olive oil, lemon juice, minced garlic, salt, and black pepper. Add the dried herbs and mix well.
  2. Add the chicken thighs to the marinade, ensuring they’re fully coated. Marinate for at least 1 hour, or ideally overnight in the refrigerator.
  3. Preheat your grill or oven to 400°F (200°C). If grilling, cook the chicken for about 6-7 minutes on each side until fully cooked. For baking, place in the oven for 25-30 minutes until the internal temperature reaches 165°F (75°C).
  4. Allow the chicken to rest for 5 minutes before serving with your choice of sides.

Notes

Save some marinade aside to baste the chicken later for added flavor and moisture. Ensure the chicken is not crowded during cooking for better results.
