Ingredients

- 2 cups sushi rice
- ¼ cup soy sauce
- 2 tablespoons brown sugar
- 1 teaspoon minced garlic
- 1 teaspoon grated ginger
- 2 tablespoons butter
- 1 cup sliced mushrooms (shiitake or button)
- 1 package cream cheese
- Chopped green onions
- Seaweed sheets (nori)
- Salmon fillets
Instructions
- Rinse sushi rice under cold water until clear, then cook according to package instructions.
- In a saucepan, combine soy sauce, brown sugar, garlic, and ginger to make teriyaki sauce and cool slightly.
- Sauté sliced mushrooms in butter until softened, season with salt and pepper.
- Preheat oven to 375°F (190°C) and grease a baking dish.
- Spread cooked rice in the baking dish, drizzle with half of the teriyaki sauce, and add sautéed mushrooms and cream cheese.
- Place salmon on top, brush with remaining teriyaki sauce, and sprinkle with green onions and nori.
- Cover with foil and bake for 20 minutes, then uncover and bake for an additional 10-15 minutes until golden.
- Let cool slightly before slicing and serve warm.
