Ingredients

  • 2 cups sushi rice
  • ¼ cup soy sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon minced garlic
  • 1 teaspoon grated ginger
  • 2 tablespoons butter
  • 1 cup sliced mushrooms (shiitake or button)
  • 1 package cream cheese
  • Chopped green onions
  • Seaweed sheets (nori)
  • Salmon fillets

Instructions

  1. Rinse sushi rice under cold water until clear, then cook according to package instructions.
  2. In a saucepan, combine soy sauce, brown sugar, garlic, and ginger to make teriyaki sauce and cool slightly.
  3. Sauté sliced mushrooms in butter until softened, season with salt and pepper.
  4. Preheat oven to 375°F (190°C) and grease a baking dish.
  5. Spread cooked rice in the baking dish, drizzle with half of the teriyaki sauce, and add sautéed mushrooms and cream cheese.
  6. Place salmon on top, brush with remaining teriyaki sauce, and sprinkle with green onions and nori.
  7. Cover with foil and bake for 20 minutes, then uncover and bake for an additional 10-15 minutes until golden.
  8. Let cool slightly before slicing and serve warm.
