Ingredients
- Chicken (breast or thighs), boneless
- Coconut milk or heavy cream
- Fresh garlic, minced
- Fresh ginger, minced
- Scallions, chopped
- Chicken or vegetable broth
- Carrots, sliced
- Bell peppers, sliced
- Spinach
- Cilantro or basil, for garnish
- Chili paste or fresh chili, to taste
Instructions
- Slice your chicken and vegetables. Chop the garlic and ginger finely.
- Heat oil in a large skillet over medium heat. Add garlic and ginger, sauté until fragrant, about 1 minute.
- Add chicken to the skillet, season with salt and pepper, and cook until golden brown and cooked through, about 7-10 minutes.
- Stir in vegetables and sauté until softened, about 3-5 minutes.
- Pour in the broth and bring to gentle simmer. Add coconut milk or heavy cream, stirring until fully combined.
- Stir in chili paste, adjusting heat level to your liking. Simmer for another 5 minutes.
- In a separate pot, boil water and cook ramen noodles according to package instructions.
- Serve by placing noodles in a bowl and ladling the creamy broth and chicken mixture on top. Garnish with herbs and extra chili if desired.
