Ingredients

  • Chicken (breast or thighs), boneless
  • Coconut milk or heavy cream
  • Fresh garlic, minced
  • Fresh ginger, minced
  • Scallions, chopped
  • Chicken or vegetable broth
  • Carrots, sliced
  • Bell peppers, sliced
  • Spinach
  • Cilantro or basil, for garnish
  • Chili paste or fresh chili, to taste

Instructions

  1. Slice your chicken and vegetables. Chop the garlic and ginger finely.
  2. Heat oil in a large skillet over medium heat. Add garlic and ginger, sauté until fragrant, about 1 minute.
  3. Add chicken to the skillet, season with salt and pepper, and cook until golden brown and cooked through, about 7-10 minutes.
  4. Stir in vegetables and sauté until softened, about 3-5 minutes.
  5. Pour in the broth and bring to gentle simmer. Add coconut milk or heavy cream, stirring until fully combined.
  6. Stir in chili paste, adjusting heat level to your liking. Simmer for another 5 minutes.
  7. In a separate pot, boil water and cook ramen noodles according to package instructions.
