A delightful creamy chicken dish enriched with garlic, earthy mushrooms, and vibrant spinach, perfect for family dinners.


Ingredients

  • 4 boneless chicken thighs or breasts
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves fresh garlic, minced
  • 8 ounces cremini and button mushrooms, sliced
  • 2 cups fresh baby spinach
  • 1/2 cup sun-dried tomatoes
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Season chicken with salt and pepper. In a large skillet, heat olive oil and butter over medium heat. Add chicken and sauté for 5–7 minutes per side until golden and cooked through. Remove and set aside.
  2. In the same skillet, add more oil if needed, then sauté garlic and mushrooms for 3–4 minutes until mushrooms are tender and garlic is fragrant.
  3. Add sun-dried tomatoes and spinach, stirring until spinach wilts. Pour in heavy cream, stirring well and scraping up browned bits from the skillet.
  4. Sprinkle in Italian seasoning, return the chicken to the skillet, and simmer for 5 minutes.
  5. Stir in grated Parmesan until melted and smooth. Adjust seasoning to taste and serve over pasta or rice.

Notes

For extra flavor, add fresh basil or parsley just before serving. A sprinkle of red pepper flakes can also provide a delightful kick.
