- 4 boneless chicken thighs or breasts
- 2 tablespoons olive oil
- 2 tablespoons butter
- 4 cloves fresh garlic, minced
- 8 ounces cremini and button mushrooms, sliced
- 2 cups fresh baby spinach
- 1/2 cup sun-dried tomatoes
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Season chicken with salt and pepper. In a large skillet, heat olive oil and butter over medium heat. Add chicken and sauté for 5–7 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, add more oil if needed, then sauté garlic and mushrooms for 3–4 minutes until mushrooms are tender and garlic is fragrant.
- Add sun-dried tomatoes and spinach, stirring until spinach wilts. Pour in heavy cream, stirring well and scraping up browned bits from the skillet.
- Sprinkle in Italian seasoning, return the chicken to the skillet, and simmer for 5 minutes.
- Stir in grated Parmesan until melted and smooth. Adjust seasoning to taste and serve over pasta or rice.
Notes
For extra flavor, add fresh basil or parsley just before serving. A sprinkle of red pepper flakes can also provide a delightful kick.
