Ingredients

  • 1 cup butterscotch chips
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup brewed coffee
  • 1/2 cup unsalted butter
  • 1 tsp vanilla extract
  • Optional: sea salt flakes, crushed nuts for topping

Instructions

  1. Grease an 8-inch square baking pan and line it with parchment paper.
  2. In a medium saucepan over low heat, combine sweetened condensed milk, unsalted butter, and butterscotch chips. Stir constantly until melted and smooth.
  3. Remove from heat and stir in brewed coffee and vanilla extract until well combined.
  4. Pour the mixture into the prepared pan, spreading evenly. Sprinkle with sea salt and/or crushed nuts if desired.
  5. Allow to cool at room temperature for 1 hour, then refrigerate for at least 2 hours until firm.
  6. Lift the fudge out using the parchment overhang and cut into squares.
  7. Store leftovers in an airtight container in the fridge for up to a week.

Notes

Use low heat to prevent burning and stir constantly for a smooth fudge texture. Allow cooling completely before cutting for even pieces.
