Ingredients

  • 1 lb salmon fillet
  • 1/4 cup bourbon
  • 2 tablespoons honey
  • 2 tablespoons brown sugar
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons olive oil
  • 2 ripe peaches, sliced
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) or prepare your grill for medium-high heat.
  2. Whisk together the bourbon, honey, brown sugar, lemon juice, and olive oil in a bowl until smooth.
  3. Slice the peaches into thin wedges.
  4. Pat the salmon dry, place it on a parchment-lined baking sheet, and season with salt and pepper.
  5. Pour half of the glaze over the salmon, arrange the peach wedges on top, and drizzle with the remaining glaze.
  6. Bake for about 15-20 minutes or grill until the salmon flakes easily.
  7. Halfway through cooking, spoon some glaze over the salmon for enhanced flavor.
  8. Let the salmon rest for 5 minutes before serving with the peaches and extra glaze on top.
