- 1 lb salmon fillet
- 1/4 cup bourbon
- 2 tablespoons honey
- 2 tablespoons brown sugar
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons olive oil
- 2 ripe peaches, sliced
- Salt and black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) or prepare your grill for medium-high heat.
- Whisk together the bourbon, honey, brown sugar, lemon juice, and olive oil in a bowl until smooth.
- Slice the peaches into thin wedges.
- Pat the salmon dry, place it on a parchment-lined baking sheet, and season with salt and pepper.
- Pour half of the glaze over the salmon, arrange the peach wedges on top, and drizzle with the remaining glaze.
- Bake for about 15-20 minutes or grill until the salmon flakes easily.
- Halfway through cooking, spoon some glaze over the salmon for enhanced flavor.
- Let the salmon rest for 5 minutes before serving with the peaches and extra glaze on top.
Notes
For a lighter version, you can substitute bourbon with apple cider vinegar mixed with maple syrup.
