  • 1 bell pepper, diced
  • 2 carrots, chopped
  • 1 cup vegetable broth
  • Fresh thyme
  • Scallions, chopped
  • Salt and pepper, to taste
  • Olive oil, for cooking

Instructions

  1. Marinate the chicken: Mix curry powder, garlic, ginger, and olive oil. Coat chicken and marinate for at least 30 minutes.
  2. Sauté aromatics: Heat oil in a large skillet over medium heat. Sauté onions, garlic, and ginger for 3-4 minutes.
  3. Brown the chicken: Add the marinated chicken to the skillet and brown on all sides.
  4. Add coconut milk and vegetables: Pour in the coconut milk and add bell peppers and carrots. Stir and bring to a simmer.
  5. Season to taste: Taste the broth and adjust salt, pepper, and curry powder as needed.
  6. Simmer: Cover the pan, reduce heat to low, and simmer for 25-30 minutes until thoroughly cooked.
  7. Finishing touch: Sprinkle with fresh thyme and scallions, add Scotch bonnet pepper if desired.
