- 1 can coconut milk
- 2 cloves garlic, minced
- 1-inch piece of fresh ginger, minced
- 1 onion, diced
- 2 tablespoons Jamaican curry powder
- 1 teaspoon allspice
- 1 teaspoon turmeric
- 1 bell pepper, diced
- 2 carrots, chopped
- 1 cup vegetable broth
- Fresh thyme
- Scallions, chopped
- Salt and pepper, to taste
- Olive oil, for cooking
Instructions
- Marinate the chicken: Mix curry powder, garlic, ginger, and olive oil. Coat chicken and marinate for at least 30 minutes.
- Sauté aromatics: Heat oil in a large skillet over medium heat. Sauté onions, garlic, and ginger for 3-4 minutes.
- Brown the chicken: Add the marinated chicken to the skillet and brown on all sides.
- Add coconut milk and vegetables: Pour in the coconut milk and add bell peppers and carrots. Stir and bring to a simmer.
- Season to taste: Taste the broth and adjust salt, pepper, and curry powder as needed.
- Simmer: Cover the pan, reduce heat to low, and simmer for 25-30 minutes until thoroughly cooked.
- Finishing touch: Sprinkle with fresh thyme and scallions, add Scotch bonnet pepper if desired.
- Serve: Pair with steamed rice or dumplings, soaking up the delicious sauce.
